Raw Zucchini Pasta with Walnut Basil Pesto

I don’t know about you, but sometimes the thought of hot, cooked food in the summer just does not sound appetizing to me. Also, I like to use raw, seasonal vegetables whenever I can! This delicious, simple-to-make dish is SO refreshing in the summertime and being able to use my homegrown, fresh, organic basil and zucchini is just an added bonus!! Not to mention this dish is raw, vegan, dairy-free and gluten-free for any of you with special dietary needs or intolerances!
