Strawberry-Coconut Granola Cookies

Not your average granola bar! These cookies are packed with energy-boosting complex carbohydrates and omega-3 fatty acids. They’re a great pre-workout snack to grab on-the-go!

  •  2 cups old-fashioned rolled oats
  • 1 cup freeze-dried strawberries
  • ½ cup shredded coconut
  • ½ cup hulled hemp seeds
  • 2 Tbsp chia seeds
  • 1/8 tsp salt
  • ½ cup Grade B maple syrup
  • 1 tsp vanilla


  1.  Combine oats, strawberries, coconut, hemp seeds, chia and salt in a large mixing bowl.
  2.  In a small pot, bring syrup to boil over medium heat. Once bubbling, turn heat down to low and cook for about ten minutes until syrup starts to thicken. Once it’s ready, remove from heat and let cool for 20-30 seconds then add vanilla and stir. To test if syrup is ready, dip the back of a wooden spoon in the syrup and let it cool. Once it’s cool, run your finger though the syrup on the spoon. It should be the consistency of hot caramel (softball stage).
  3.  Pour syrup and vanilla over oat mixture and mix until fully incorporated.
  4.  Add 1/4 cup of mixture into each muffin cup in a non-stick muffin pan. Using a glass or mug, pack the granola down tightly.
  5.  Refrigerate at least two hours (preferably overnight). Remove from refrigerator and release your granola cookies from the tins.
  6.  ENJOY!
