Mexican Cauliflower-Crust Pizza

The first time I had Cauliflower-crust pizza, I made it "Italian Style". It was delicious but I just HAD to try making a Mexican version. I had seen plenty of recipes for typical Italian cauliflower-crust pizza and wanted to make something original. The result? Even more delicious than I imagined! This pizza is so satisfying and delicious. It was also good cold the next day for lunch!

Ingredients

Crust:

1 medium head of cauliflower, cut into small florets

1/2 cup shredded Mexican blend cheese

2 eggs

1 tsp Chili Powder

Salt and Pepper

1 tsp Extra Virgin Olive Oil (for tray)

Toppings:

1/2 cup Refried Beans (black or pinto)

3 tbsp Tomato Salsa

1/2 Avocado, sliced

Directions

Preheat oven to 450 F.

Pulse small florets of cauliflower in a food processor until it becomes the consistency of rice (I had to do mine in two batches).

Steam the ground cauliflower in a steamer basket until soft (approximately 15 minutes). Once soft, scoop cauliflower into a cheese cloth and squeeze out ALL moisture. (You could probably use a clean, non-linty towel if you don't have a cheese cloth!) Again, I had to do this in three batches, my cheese cloth was quite small. I got about 3/4-1 cup of water out of my cauliflower.

Once all water is squeezed out, put cauliflower, 1/2 cup shredded cheese, 2 eggs, chili powder, and salt and pepper in a large bowl and mix until combined.

Line a large baking sheet with parchment paper and spread 1 teaspoon of Extra Virgin Olive Oil over the parchment. Scoop contents of the bowl into the middle of the tray and spread in a circular shape until it is about 1/4" thick.

Put crust in the oven and bake for approximately 15-20 minutes or until crust is golden brown.

Remove crust from the oven and spread the refried beans on the crust. Next, spread tomato salsa over the beans. Top with sliced avocado. Cut pizza into 8 slices and serve!

*FYI: This pizza is really good dipped in plain Greek yogurt or Organic Sour Cream. I highly recommend trying it.

*If you'd like the pizza more cheesy, before adding the avocado, sprinkle the pizza with shredded cheese and put back in the oven for 5-10 minutes or until cheese is bubbly and golden. Remove from oven and add avocado on top.

*Be creative! Try making this pizza Italian style! Replace the Mexican blend cheese with Mozzarella Cheese and replace the chili powder with Italian herbs. Top with tomato sauce, mozzarella cheese, and some oregano!
