Oven-Roasting carrots brings out their natural sugars and the herbs balance out the sweetness. This easy-to-make side dish pairs great with some grilled chicken or roasted turkey!
8-10 full-sized carrots, cut into bite-sized pieces
2 tbspExtra Virgin Olive Oil
1/2 tspsalt
1/2 tsppepper
1 tspdried rosemary, crushed
1 tspdried thyme
Directions
Preheat oven to 400 F.
Toss the carrots in a bowl with olive oil salt and pepper and herbs.
Transfer carrots to a glass baking dish and roast for 15 minutes. Toss carrots and roast for an additional 15 minutes or until fork tender and golden brown on the edges.
