Herb-Roasted Asparagus

Asparagus is loaded with Vitamins B6 and K and is high in calcium, zinc and magnesium. It also contains a prebiotic called inulin that promotes a healthy digestive tract. Fresh asparagus is one of the easiest vegetables to prepare. It pairs well with grilled fish or chicken.

Ingredients

1 bunch asparagus

1 tsp dried rosemary

1/2 tsp dried thyme

1/2 tsp dried oregano

2 tbsp Extra Virgin Olive Oil

salt and pepper, to taste

1/2 fresh lemon

Directions

Preheat oven to 400 F.

Cut off tough bottoms of asparagus (about 1")

Place asparagus in baking dish large enough that they are not all on top of one another. Drizzle asparagus with extra virgin olive oil and mix around until they're evenly coated.

Add herbs and salt and pepper and mix again so it is evenly distributed.

Place dish in oven and bake for 10 minutes. After 10 minutes, squeeze fresh lemon over asparagus and bank for an additional 5-10 minutes or until fork tender.

ENJOY!

*For added flavor, shave some parmesan cheese on top of the asparagus as soon as you take it out of the oven.
