Food of the Week: Carrots!

This week’s featured food of the week is CARROTS! Carrots are a nutritional powerhouse packing over 400% Daily Value of vitamin A. They are also a great source of vitamin C, magnesium, potassium and many more essential nutrients. Carrots are an extremely versatile ingredient and can be used in a variety of different ways. We recommend buying full-sized organic carrots.  If your local grocer carries the multi-colored carrots don’t be scared to pick some up. They can be used just like their orange cousins and provide you with some different nutrients from pigments not found in normal carrots.

Some tips for buying carrots:

-Carrots should be firm, smooth and bright in color.

-Store in a plastic bag or paper towel in the coldest part of your refrigerator (produce drawer).

-If carrots are purchased with greens still attached, be sure to remove them before storage as the green will suck the moisture from the carrot and cause pre-mature wilting. (*note* you can add the greens to your salads or juices!)

To help incorporate carrots into your diet try:

– Chopping them into sticks and storing them in the refrigerator for a healthy snack. I like to dip them in hummus or guacamole.

– Shredding them onto salads.

– Chopping them into disks and steaming or roasting for a classic dinner side.

– If you have a juicer make a fresh carrot juice! If you like it a little sweeter, try adding oranges.

– Cut the carrots in half length-wise and grill them with some olive oil, salt and pepper.
