Chocolate-Banana Protein Pancakes

A healthier version of your typical breakfast pancakes, these chocolate-banana protein pancakes are sure to curb your sweet craving, satisfy your hunger and give you energy to take on the day!

Ingredients:

½ cup oat flour

½ cup quick-cook oats

½ cup plain yogurt

2 eggs

¼ cup ground flax seeds

1 tsp baking powder

2 scoops chocolate whey protein (We like Solgar’s Whey-to-Go best!)

1 banana, mashed

½ cup milk

Directions:

  1. Combine all ingredients in a medium mixing bowl. Stir until well combined.
  2. Heat a large pan or griddle to medium heat.
  3. Using a ¼ cup measuring cup, scoop batter onto hot surface. When pancake is golden on first side, flip it over and cook until the second side is also golden.
  4. Remove from heat and serve immediately with Grade-B maple syrup or your favorite fresh fruit.

*Instead of putting Maple Syrup on these pancakes, I added a 1/4 cup of organic mini dark chocolate chips to the batter. YUM.
